still one of our most enjoyable wines to produce, this blend of estate and locally grown fruit is classically fermented and aged in a mix of French and American cooperage for a minimum of 6 months. 90% of the blend is allowed to proceed through malo-lactic fermentation, adding richness and light buttery undertones. Balanced and food friendly, this wine should be enjoyable now, but also reward a few years of bottle aging for those inclined.
