this varietal takes significant time to ripen, typically making it one of the last grapes to come into the winery every vintage…..of course, we are running on fumes at this point in harvest, but the arrival of this variety into the winery always puts a jump in our step, not just for signifying the end of another harvest, but to make that last tank of wine as good as the first. We ferment this wine “on skins” as long as possible, to allow for full expression of aromatics and color. Matured in mostly American oak barrels for upwards of 14mos.
